The Dearborn invites guests to celebrate the holidays with an exclusive four-course Private Dining Room menu available in the elegant Rialto Room. Priced at $175 per person, the seasonal menu by Executive Chef Aaron Cuschieri highlights refined Midwestern flavors with global touches, ideal for festive gatherings or corporate celebrations.
Guests can begin with Dry-Aged Beef Tartare with quail egg yolk and Asian pear or Tuna Tataki with soy-sesame sauce and pickled Fresno chili, followed by either the Midwest Is Best Salad or Honeynut Squash Soup with goat cheese tortellini.
Entrées include the indulgent 45-Day Dry-Aged Ribeye with truffle chive whipped potatoes, Pan-Roasted Chilean Sea Bass with Meyer lemon beurre blanc, or Day Boat Scallops with black truffle jus. A rich Valrhona Dark Chocolate & Marcona Almond Tart completes the experience.
Guests may enhance their event with passed hors d’oeuvres, such as Seared Yellowfin Tuna Wontons or Maryland-Style Crab Cakes, and The Dearborn’s signature Caviar Service featuring Petrossian selections.
